We used this incredible peanut butter to make delicious peanut butter cups. The staff at Hillcrest Pharmacy loved it so much we thought we would share the recipe with you. Bonus – it’s nice and simple and it’s gluten free.
½ cup coconut oil
½ Nut Brother’s peanut butter of your choice (we used super-smooth)
¼ cup cocoa
1tsp vanilla essence
½ tsp salt
3 tbsp honey or pure maple syrup
Melt coconut oil, then stir in all other ingredients. Mix well to combine.
Line mini muffin tins with paper cases. Pour chocolate mixture into each case- filling 1/3 of the way.
Place in freezer for ten minutes then spread ½ tsp–1 tsp of peanut butter on first layer of chocolate. Pour remaining chocolate mix on peanut butter layer. Freeze again.
Make approx. 18 mini peanut butter cups and will last in freezer for up to two weeks.
